WThis is an easy version of a cocktail featured on our latest drinks list. Designed as a batch pre-mixed which is bursting with the essence of a holiday season, rendering it perfect for hosting a celebration. Save the extra citrus syrup you can use for breakfast cocktails, puddings, or for more rounds of the drink.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Place all the components in a saucepan, heat until it reaches a gentle boil, agitating so the sugar melts. Next, turn off the heat and let it to reach room temperature fully. Pour to a clean bottle, close it and store in the refrigerator, it will last for around one month.
Preparing the Batch Mix: Pour all the liquids into one sizeable container, allow it to infuse for 60 minutes, then pass it through best through cheesecloth, to ensure it's completely strained.
To serve: Add 85ml from the cocktail base to a cocktail shaker packed with ice, gently stirring lightly for a minute until cold. Strain into a frosted cocktail glass or equivalent, top with the cranberries and finish by giving it a light spray of mandarin oil over the top.
